Steps to make falafet (chicken bean paste)
Step 1: Prepare ingredients
Buy chickpeas, you should soak them overnight for at least 8 hours or boil for about 30 – 45 minutes to help soften the beans. Then take out the beans to dry.
At the same time, you proceed to mince the onion, garlic, and cut the coriander into pieces about 3cm .
Step 2: Blend falafel
Using a blender, you in turn add the ingredients: chickpeas, garlic, onions and the prepared spices, press the puree button.
After you see the mixture is almost pure , you just add the parsley, grind for another 1-2 minutes to let all the ingredients mix well, then turn off the machine.
Next, pour the mixture into a cup, and then use a spoon to press it down to the bottom of the cup. Finally, use food film to cover, then place in the refrigerator for about 60 minutes .
Step 3: Create falafel balls
Wash your hands, then take out the chickpea paste mixture from the refrigerator to make round balls, just to eat .
You can use a tablespoon, scoop the beans just right, put them in the palm of your left hand (at this time the hand is slightly cupped to hold the bean paste). Next, use the thumb and index finger of your right hand to knead the dough in the direction from the palm of your hand to the outside of your finger. Remember, during the shaping process, you should rotate the ball in the palm of your hand to make it round.
Or, you put the right amount of bean paste on the left palm, then use the right palm to gently round it in a clockwise direction to shape the ball.
Step 4: Fry the falafel
Put a non-stick pan on the stove, put cooking oil in the pan until the oil is hot (bubbles appear), then add each bean ball.
Use chopsticks to stir the rolls, when the outer layer is beautifully golden, take it out, put it on a plate lined with absorbent paper, or a basket to drain the oil.
Step 5: Make the falafel dipping sauce (if desired)
You can make Hummus sauce – this is one of the popular dipping sauces in Middle Eastern countries, suitable with felafel (chicken balls). The taste of this sauce is sour and very nutritious, similar to when you use mayonnaise.
Depending on the taste of each locality, the recipe for making Hummus sauce is different , basically including:
- Softened chickpeas (about 100 – 200 grams) + garlic (2 sprigs) + sesame butter (3 tbsp) + lime juice (2 tbsp) + olive oil (2 tbsp) + cumin powder (1 teaspoon) + chickpea broth (just enough to make the mixture thick) + a little salt and black pepper .
- All grind with a blender, then pour into a bowl to use.
If you don’t have time, you can also eat chickpea patties with chili sauce, ketchup, and mayonnaise !
