- 5ml strawberry syrup
- 15g flexible jelly powder
- 3g crispy jelly powder
- 100g tapioca flour
- 1 pack of milo powder
- 130g white granulated sugar
- 200g glutinous rice flour
- 50g tapioca flour
- 50g cocoa powder
- 15g food coloring each
- 1 pear
- 5g butterfly pea flower

How to make mixed caramel
Step 1Make caramel
To make caramelized sugar, put a pot on the stove and add 80g of prepared sugar , then add water to the level of the sugar (ratio 1:1) . Put on medium heat and cook until the sugar turns the color of cockroach wings, then turn off the heat. Then stir well and quickly pour the hot caramel into the prepared molds , boxes or cups.
Good tip
While the sugar is still hot, add a teaspoon of fresh lemon juice to the caramel for flavor and help the caramel to harden longer.
Step 2Make flan
Using 5 yolks and 3 egg whites, beat in a bowl then beat until melted.
Put 500ml of prepared fresh milk into the pot, then add 100ml of condensed milk . Heat until the milk is warm. Note not to boil, but only until the milk has just warmed up. Then slowly add the milk mixture to the eggs , do not add too quickly because too hot milk will cook the eggs.
After stirring, the egg-milk mixture is filtered through a sieve several times to make the cake mixture smooth.
Step 3Steamed flan
Pour the custard mixture into the original molds then cover the molds to start steaming.
Spread a layer of towel into the steamer , make sure the towel can release steam, and then put the cake in.
Heat a pot of water, when the water starts to stick, put the cake on top , note that the heat is low, cover the lid and check after 30 minutes. After the cake is cooked, turn off the heat and remove the cake to cool and put it in the refrigerator for 2-3 hours.
Good tip
To check if the cake is done or not, use a small toothpick to skewer the cake, after skewering the milk does not come out and the toothpick is dry, it means the cake is cooked.
Step 4Make pear jelly
First peel the pears and then dice them. Next, put the pears in the bowls of colored water and soak for 1 hour for the pomegranate seeds to infuse.
After the pears have absorbed the color, add 3 teaspoons of tapioca starch to each part , mix well, and then cook in boiling water to boil the pear jelly until the transparent outer skin is visible.
Next, you take out the jelly to the ceiling through cold water and then let it dry. Then add 1 tablespoon of sugar to each part and mix well.

Step 5Make agar jelly
First, put 500ml of water in the pot. Next, add 5g of jelly powder , mix well while stirring so that the jelly powder does not clump.
After the mixture boils, add 150g of sugar, continue to heat and stir until the sugar dissolves and turn off the heat.
Finally, put the jelly mixture into 2 molds, 1 mold mixed with 1 tablespoon of condensed milk, the other mold mixed with 2 tablespoons of pineapple juice . Then, stir well and let the jelly solidify.
Step 6Make pearls and é seeds
How to make pearls:
- First , put in a bowl of 200g glutinous rice flour, 50g cocoa powder, 50g tapioca flour and mix well. Next , slowly add a little warm water to the bowl of dough and gently knead with your hands until the dough is smooth.
- Cut the dough into bite-sized pieces and then roll over a layer of tapioca so that the pearls do not stick when boiled.
- Boil the pearls for about 10-15 minutes until the pearls emerge, then turn off the heat, continue to cover and incubate for another 5-7 minutes . Then bare feet through cold water is complete.
How to make elm seeds:
- Put 1 tablespoon of basil seeds in a bowl, 50ml of water and soak until the seeds bloom.
- Then, put 5ml of strawberry syrup in the cup of basil seeds and mix well.
