Step 1:

Cut the meat into large and thick pieces , taking care to remove the fat and cut along the grain so that the meat is not tough and easier to cut.

Put the meat in the oven to dry at a temperature of 100 degrees C, the fire is on the bottom and turn on the fan for 90 minutes , every 30 minutes you take it out to flip the side so that the meat is more evenly dried.

Note: Do not close the oven door completely, but use a chopstick to block the door so that the steam escapes, the meat will dry faster.

If you do not have an oven, you can put the meat on the drying pan until the meat reaches the desired dryness.
