Hi, my name’s Brad Vigue. I am the Executive Chef for Residence Dining at UBC. Today we’re going to learn how to cut an avocado!
One of the first things when cutting an avocado is going to be buying one and identifying whether it’s ripe, overripe, or ready to eat. One little trick that I’ve learned is the stem: take it off and look underneath. The colour will indicate where the rest of the rest of the avocado is. It’s an easy way to know whether your avocado is ripe or overripe.
After that, cleanly and carefully cut through the middle of the avocado. Your knife will hit the pit. You can just roll it on the blade. Turn it in half, and you’ve got a beautiful avocado.
Be careful when taking the pit out. Tap it with your knife, and give it a turn. You’re left with a nice, clean pit. There are two ways to proceed, depending on what you’re looking to use your avocado for. The first option: you can cut in half, at which point it typically peels easily, and you can slice at that point. This way is great for sandwiches or salads.
The other option is: you can cut in the skin very carefully. This is an easy way to squeeze it out. And you’ve got diced avocado, ready for guacamole.
