How to make coffee flan
Step 1:Make caramel

Put the pot on the stove for 140g of sugar, 60ml of water and 2 teaspoons of lemon juice (note not to stir, just shake the pot gently so that the sugar dissolves)

Step 2:Separate eggs and beat egg mixture

Separate 3 whole eggs into a bowl and the remaining 2 eggs, use a sieve to filter out 2 more yolks into the bowl, add 80g of sugar, stir well to combine.
Step 3:Boil coffee mixture

Put the pot on the stove for 400ml of unsweetened fresh milk, 150ml of fresh milk cream, 2 tablespoons of instant coffee, then stir well until the mixture is dissolved and then turn off the stove.
Step 4:Mix the 2 mixtures and filter through a sieve

Slowly pour the coffee mixture in step 3 into the egg mixture in step 2, while pouring, gently stir the 2 mixtures (avoid vigorous stirring to create air bubbles that cause pitting ). Next, strain the mixture through a sieve until smooth.
Step 5:Steamed buns

Pour the mixture evenly into the caramel molds in step 2 (do not overfill).

Put the steamer on the stove, put a towel in the steaming pot to help spread the heat evenly because if we don’t properly watch the fire, it will make the water boil so that the cake will be pitted, put the cake in the steaming basket, cover the lid and simmer in low heat for a long time. 20 minutes ( note every 5 minutes we open the lid and proceed to wipe the steam on the lid ), the cake is cooked, the surface of the cake is no longer concave when we press it, if it is cooked, turn off the stove.
