  • 1.5 cups of warm water
  • 1 tablespoon sugar
  • 2 tablespoons kosher salt
  • 1 pack of dry yeast
  • 4.5 cups flour
  • 2 tablespoons melted butter
  • 10 cups of water

Fermented yeast. Stir together 1.5 cups warm water, sugar, and 2 tablespoons kosher salt in a large bowl. Open the yeast package and pour in the mixture. Let the mixture sit until the yeast foams, about 5 minutes.
Add butter and flour. When the yeast begins to foam, pour in the melted butter and add 4.5 cups of flour. Use a wooden spoon to stir the mixture until the dough is sticky. At this point, you will begin to mix the dough faster, stirring the dough in a circle and stirring as needed, doing this until the dough has a smooth texture and no longer sticks to the sides of the bowl.

  • If you have a stand mixer, you can use a mixer instead of mixing the dough by hand.
  • Doing this step by hand will take about 10 minutes, but if using a hand mixer it will take about 5 minutes.

Wait for the dough to rise. Brush oil into a large mixing bowl. Roll the dough into a ball and place it in an oiled bowl. Cover the bowl with cling film and place it in a warm spot in the kitchen. Let the dough rest in the bowl and let it rise until it has doubled in size, about 1 hour.

  • If you want to reuse the bowl you used to mix the dough, you need to remove all the flour from the bowl, wash it, then grease it with oil and continue to put the dough in the bowl.
  • You can let the dough rise overnight in the refrigerator, if desired.

Shape the pretzels

Divide the dough into equal parts. Depending on the size of the pretzel you want to make, the dough can be divided into 8-12 equal parts. The bigger the pretzel, the softer the cake inside will be. Small pretzels will be firmer and crispier.
Roll dough. Place each portion of the dough onto a floured surface. Place your palm on top of the dough. Use your hands to roll the dough into a long dough. Continue rolling the dough until the dough is about 50cm long. Do the same for the rest of the dough.

  • The length of each strand of dough will depend on your personal preference. If you want the pretzels to have thin circles and large holes, you can make the dough longer and thinner.
  • If you want a fuller pretzel, you can stop when the dough is about 45cm long.

Shape the pretzels. Place the dough yarn on a flat surface in front of you. Make the dough into a U shape. Then, pull the two ends of the dough to cross each other. Continue pulling and pressing the ends of the dough into the lower part of the U. Use your fingers to gently grasp the ends of the dough to make sure they are in place. Do the same for the rest of the dough.
