Ingredients for milk cream

  • 600ml heavy cream
  • 600ml fresh milk without sugar
  • 3 sweet corn
  • 200g sugar
  • 6 chicken eggs

How to make milk cream

Step 1Cook corn milk

First, you put 600ml of heavy cream, 600ml of unsweetened fresh milk, 200gr of sugar into the pot and stir this mixture well.

Next, you separate the corn kernels and the core of the corn, you cut it into small pieces and then put it in the pot of milk mixture , bring this mixture to a boil.

Step 2Cook corn cream mixture

You separate 6 egg yolks into a bowl and beat well, then add each spoon of cooked corn milk and stir well. When the egg yolks are dissolved, put them back into the pot of corn milk and continue to boil this mixture over medium heat , then turn off the heat.

When finished cooking, you filter this mixture through a sieve to remove the core of the corn and keep the kernels, add a little salt , stir and put in the freezer for about 4 hours .

When pouring corn milk into the egg yolks, stir well so that the eggs are not cooked .
To make the custard cream more smooth and sweet, you can add 2 tablespoons of corn syrup to the corn cream mixture before refrigerating.

Step 3Whip and freeze the cornstarch
