Whip 115ml of fresh cream, then add ½ part of the caramel mixture just beaten with the yolk and mix according to the Fold method (the technique of cutting – folding – rotating in baking). Next, add the rest of the caramel and mix well.
Pour the caramel mixture into the cake pan where you previously put the apple mousse and cake, and top it with an extra layer of macaroons. Finally, put the cake in the fridge for at least 3 hours.
