Preheat oven to 246ºC. This recipe uses high baking temperatures to reduce cooking time. While you wait for the oven to heat up, you can take the next few steps to save more time.
Prepare a baking tray, if desired. This recipe does not require the baking tray to be greased or “non-stick” in any way. However, if you want to apply margarine or spray non-stick cooking oil in the baking tray, this will not affect the finished product. This can also be a good idea if you’ve had trouble with cupcakes sticking to the tray in the past.

Mix dry ingredients. Place flour, baking powder, salt and sugar in a large bowl. Thoroughly mix the ingredients.
Mix wet ingredients. Measure the oil and pour into a separate bowl. Next, measure the milk and pour it into the oil, but do not stir or mix. Pour the above mixture into the bowl containing the dry ingredients.
Mix the ingredients into a dough. Use your hands or a dough mixer to gently mix the dry ingredients with the wet ingredients. Transfer the dough to a floured surface (the kitchen counter is a good place) and knead once or twice to form a ball.

Preheat oven to 232ºC. With the above recipe, you don’t need to grease or prep the baking tray, but you can oil if you like. Proceed to the next steps while waiting for the oven to heat up.

    • Both recipes above can be frozen very well. To freeze the cake, line a baking tray with parchment paper before mixing the dough, then cut the dough into individual cakes, place on a tray and freeze.
