Ingredient

  • 2/3 cup (165 ml) warm water (about 38 degrees Celsius)
  • 1 teaspoon (5 ml) sugar
  • 1 teaspoon (5 ml) yeast
  • 1/2 tablespoon (7.5 ml) salt
  • 1 tablespoon (15 ml) olive oil
  • 2 cups + 1 teaspoon (250 g) flour

Steps

Pour warm water into the bowl. Add yeast and sugar. Stir gently and then leave for about 5-10 minutes until the yeast activates by turning into foam on the surface of the water. Then add salt and oil.
Slowly pour in the flour while constantly stirring the mixture. You’ll know if you’ve added enough flour when the mixture is too thick to stir.
Knead dough . When the dough is shiny and slightly sticky (but not too sticky) it is ready to knead; a small pinch of powder that can be stretched (by squeezing and pulling) thin enough to let light through.

  • Remove the dough from the bowl and place it on a clean surface covered with dry flour. A dry cutting board or clean countertop is best. Make sure the surface is at a comfortable height when kneading the dough. If the surface is too wet or sticky, you can sprinkle more dry flour on top.
  • Form the dough into a ball and start pressing. Press your palm firmly into the dough and push it forward slightly.
  • Fold the far edge of the dough up and towards you, then press it into the center of the dough. Press and roll gently. Repeat the press-fold-roll process throughout the kneading process.

Let the dough rise for up to 1 hour at room temperature or 5 hours in the refrigerator.
Place the dough on the floured counter, then sprinkle the dry flour over the dough.

  • Use your hands to flatten a round dough ball down to about 2-4 cm thick.
