How to make instant cucumber kimchi
Step 1Process materials
Wash the chives, remove the roots, then cut into 4cm long pieces. If you like the pungent taste of chives, you can keep the root, or leave it out.
Cucumber, de-stemmed, halved, thinly sliced. Sprinkle salt on the cucumber gently squeeze, remove the remaining plastic, rinse and drain.
Step 2Mix kimchi
For cucumber, add vinegar, sugar, garlic, fish sauce, sesame oil, paprika and mix well for 2 minutes.
