How to make panettone fruit bread
Step 1Soak dried fruit
You put 100gr orange peel jam, 100gr mixed fruit jam, 50gr raisins, 50gr dried cranberries into a bowl . Then you add 40g of rum , mix well, cover with cling film and refrigerate for at least 1 hour.
Note: If rum is not available, you can substitute it with fruit wine or soak in warm water for 1 hour.
Step 2Make the dough
You put 50gr of flour number 13, 5gr of yeast, 20gr of honey, 50gr of fresh milk in a bowl , mix well, then cover with plastic wrap and incubate for 1 hour at room temperature , until the dough expands. sometimes keep refrigerated until use.
Step 3Make the main dough
First, you cut 150g of butter into a bowl , cover with cling film and place in the refrigerator until use.
Next, you use 300gr of flour number 13, 4gr of yeast, 20gr of powdered milk, 50gr of sugar, 3g of salt in a bowl , mix well.
Next, you add 155g of cold fresh milk, 3 cold egg yolks and 1 cold egg to the flour , use a mixer to mix the dough into a homogeneous mass, blending together. Then you add the cooled dough , continue to knead again for about 10 minutes.
You grate a little orange peel into the dough and knead well, then right after that, you add cooled unsalted butter and continue to knead the dough and finally you add the dried fruit prepared in step 1 to knead until When the dough mass can separate into a bowl and pull a thin film.
Note
– You can increase or decrease the amount of sugar according to your sweet taste.
– You can add egg yolks to make the color more beautiful.
– If mixing the dough by machine, the total mixing time can be 25 – 30 minutes for a 1000W machine. You knead with low to high speed, while kneading, knead at medium speed.
– The dough will be very wet at first, but when you knead it, the dough will separate into a bowl, shiny.
Step 4Annealed powder
You sprinkle some flour on a table or a flat surface, put the beaten dough on it to check if the dough has separated into a bowl and pull the thin film .
You put the dough into a large enough bowl or bowl with a lid, incubate at room temperature until the dough has tripled or can be kept overnight in the refrigerator.
Step 5Put the dough into the mold
After the dough has risen enough, put it on a flat table, use your hands to knead the dough, and then put the dough into the available mold.

Note
In case you use an aluminum mold, after taking the cake out of the oven, turn the cake upside down with the parchment paper included, then pierce the parchment paper with a skewer.
