Step 3Green bean slug
Dissolve 10g of powder in 40-50ml of water.
Sift the mung bean paste into a non-stick pan and add 75g of coconut oil. Stir well until the coconut oil is fully incorporated and slug over low heat.
When the water in the filling is almost empty, add the flour water and continue to stir over low heat until the filling is completely complete and forms a firm, smooth and elastic mass. If the filling is vertical, it will not be mushy.
Step 4Mix moon cake dough
First, mix together 200g of baking sugar and 40g of cooking oil. Sift 140g cake flour and 7g matcha powder into batches, add sugar and mix well.
Knead by hand until dough is even and let rest for 30 minutes.
Note: The flour should not be added to the sugar water at the same time because it will be difficult to mix the flour.
Step 5Cake wrap
Salted eggs, separate the yolks and then rinse the salted eggs with diluted wine. Next, put the salted egg in and bake in the oven at 150 degrees Celsius for 7 minutes.
Take a little green bean paste, round it, add salted egg and mix well.
Roll out a piece of dough, roll it flat, put the filling in the middle, grab the edges of the dough and roll it up.
Step 6Close and bake the cake
Lightly dab the mold with flour, put the cake into the mold and press several times with your hands to shape the cake.
Close the cake
Preheat oven to 150 degrees Celsius for 7 minutes. Then put the cake in the oven and bake at 150 degrees C for 15 minutes.
Mix 2 tablespoons of fresh milk with 1 tablespoon of cooking oil. Remove the cake from the oven and use a small spray bottle to lightly spray the surface of the cake. Let the cake cool completely then spread a thin layer of milk on top.
Continue to bake a second time at 150 degrees C for 15 minutes.
