How to make sticky rice with charcoal
Step 1Process materials
First, you mix 500g of sticky rice with 500g of waxed glutinous rice , then soak it overnight or soak it in warm water for 5-6 hours . You also soak the green beans and soak the same time with 2 types of sticky rice. After soaking, wash it clean to dry.
The green onions you wash and cut into a bowl, and the pandan leaves after washing through cold water, drain the water, divide it into 2 parts . One part is for cooking sticky rice and the rest is tied into a roll for cooking coconut milk.
Step 2Cooking sticky rice with charcoal
After draining, you put the steamer on the stove, add enough water to use, put pandan leaves in it. Pineapple leaves will make sticky rice more fragrant and attractive. Pour the sticky rice into the basket and spread it out evenly , turning two to three holes to drain the water and cook the sticky rice faster.
Afterward. Just close the lid and steam for 30 minutes on high heat . After 30 minutes, you open the lid of the pot, add a little water and continue to steam for another 10 minutes , then turn off the stove. Open the lid of the steamer, sprinkle 5g of salt around the sticky rice and mix well, to make the sticky rice more rich and salty.
Step 3Steamed green beans and mash
Add a steamer on the stove, put green beans in and steam for 20 minutes . When the beans are cooked and bloomed evenly, put them in a large bowl. Put in a bowl ½ tbsp salt, 2 tbsp sugar , and mix well.
Next, use a spoon to smooth the green beans. When the beans are pureed, cover them with food wrap to prevent the green beans from drying out.
Step 4Cook coconut milk
Put the pot on the stove and pour in 500ml of coconut milk , you add ½ tbsp of salt, 3 tbsp of sugar, 1/2 tbsp of Tai Ky tamarind powder and stir well to combine.
Next, you add the tied pandan leaves to cook together . When the mixture boils, take out the pandan leaves and add the remaining Tai Ky tapioca powder mixed with water. Cook until the mixture is slightly thickened, then turn off the heat.
Step 5Roasted sesame beans
Next, you put the pan on the stove and add 10g of peanuts and roast them with salt , when cooked, peel them . Take advantage of the frying pan that has just roasted the beans for 10g of white sesame and roast until fragrant, then turn off the heat. Put in a plastic bag and smash it , set aside.
Step 6Make onion fat and salt roasted sesame
Add ½ teaspoon of salt and ½ teaspoon of sugar to a cup of green onions , pour 30ml of boiled cooking oil into it and mix well to get the onion fat.
Next, pour into a bowl of 85g sugar , then add 25g salt , add roasted sesame and crushed peanuts, mix well to complete the fragrant sesame salt.
Step 7Finished product
Finally, you put a sufficient amount of sticky rice on the sponge cake, then add green beans on top and spread it evenly. Finally, you pour over the onion fat, sprinkle with sesame salt and a little grated coconut and you’re done.
