Ingredients for meat char siu
- 550g pork (lean mince)
- 15g purple onion
- 10g garlic cloves, 5g minced garlic
- 40ml white wine (if available)
- 5 cloves of scallions

- 240ml water
- Seasoning: 1/2 tbsp golden granulated sugar, 1.5 tbsp honey, 1 pack of five spices (3g), 1 pack of char siu seasoning sauce, ground pepper (depending on taste), 1 tbsp soup broth, 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 2 tablespoons cooking oil, 1/2 tablespoon monosodium glutamate
How to make char siu
Step 1Process materials
First, wash the meat and cut it into smaller pieces so that the marinade can absorb the spices. All the garlic cloves, red onion, green onion head, coriander root, pepper and 30-40ml of water are put in a blender and pureed. If you don’t have a blender, puree them.
Step 2Scent meat
Put the meat in a bowl and then add all the five flavors, white wine, char siu marinade, oyster sauce, soy sauce, honey, yellow sugar and pureed mixture.
Then, mix well, cover with cling film and marinate for 1-2 hours at room temperature. If you want to marinate for more than 2 hours, put it in the fridge.
Step 3Making char siu meat
Put the pan on the stove, add 2 tablespoons of cooking oil, after the oil is hot, let the minced garlic fry until fragrant . Fold the char siu meat into the pan, turn all sides to make it fragrant and add all the sauce with 1 tablespoon of colored water, ½ teaspoon of MSG, 150ml – 200ml of water (so that the water completely covers the meat).
Then close the lid and cook over medium heat. Occasionally, about 5 minutes, open the lid and turn the meat to allow the meat to absorb the sauce evenly.

Step 4Finished product
You cook until the water thickens (do not let the water dry), the meat turns dark red and shiny, then turn off the stove. Finally, let it cool and then cut the meat into bite-sized pieces and arrange on a plate to finish.
