- 100 gr all-purpose flour
- 20 gr corn flour
- 20 gr fried dough
- 1 egg
- 560 ml water
- 75 ml soy sauce
- 50 gr octopus
- 40 gr scallions
- 30 gr red ginger (can be ordered on online stores, Japanese supermarkets)
- 5 gr ginger (1 little finger size sample)
- 5 gr garlic (3 – 4 medium cloves)
- 50g brown sugar (available at supermarkets)
- 20 gr honey
- 30 gr of tapioca flour

Steps to take
Step 1 : Make a dough mixture for the crust: Mix 1 egg into 320ml of water and 15ml of soy sauce (1 tablespoon). Sift finely 100 grams of flour, 20 grams of cornstarch, mix well with 20 grams of breadcrumbs.
Slowly add the flour to the water and egg mixture, divide the flour into 3 batches, stirring while stirring until the powder is dissolved until there are no lumps.
Step 2: Heat the frying pan on the stove, use a paper towel or a brush to spread a thin layer of oil on the mold. Once the molds are hot, fill the molds with the batter.
Drop the filling including octopus, red ginger, and green onion in the middle of the molds.
Step 3 : Continue to fry for 2-3 minutes until the surface of the cake is almost golden and shrink, use a small bamboo stick to pull out the edge of the cake mold and separate the cake from the mold and then turn it over.
Remove the cake from the mold and place on a plate while you wait for the sauce to be made.
Step 4 : Make Teriyaki Sauce: dissolve the sauce ingredients including: ginger, garlic, 50 gr brown sugar, 20 g honey (about 1 tablespoon), 60 ml soy sauce (about 4 tablespoons), 240 ml water. Bring to boil on the stove. Season to taste.
Dissolve 30 grams of tapioca starch with a little cold water and slowly add it to the sauce, stir until the sauce thickens, then turn off the heat, strain the sauce through a sieve to remove the garlic ginger residue.
Step 5 : Sprinkle with dried seaweed and make Teriyaki sauce that can be combined with Mayonnaise on the cake to add more flavor. Use the cake immediately to keep the hot and fresh taste of Takoyaki.
