Step 1Make mint chocolate mousse
Finely chop 30g of dark chocolate and filter it through a sieve. Divide into 2 parts: 1 is fine chocolate, 2 is large grain chocolate .
Put 6g of gelatin powder with 20ml of cold water in a cup, soak the gelatin for 10 minutes for the gel to swell.
Put in a pot 150ml of fresh milk, 10g of diameter , bring to a boil. Once the milk has boiled, add 220g of white chocolate and stir well. Finally, add the soaked gelatin and stir until the mixture is completely dissolved. Turn off the stove, let cool.
Add 50ml of mint liqueur, 12ml of mint essence and beat with a whisk. Put in the pot about 1-2 drops of blue and green food coloring to create a pleasant mint green color.
Prepare 2 bowls , the larger bowl you put in ice water, the other bowl for 200ml heavy cream 36% . Place a bowl of heavy cream in a bowl of ice cold water , and beat with a mixer until fluffy . Add 1 drop of blue and 1 drop of green , stir well to create color.
When the chocolate mixture above cools down to about 34 degrees Celsius , you add the heavy cream just beaten. Mix the mixture well, add the large chocolate granules (save a little for later to decorate the cake), stir to blend.
Prepare the Silikomart SF012 mold and brush it with a thin layer of cooking oil . Scoop the chocolate mixture into small molds and place in the refrigerator to harden.
Step 2Making cocoa tart base
In a bowl, add 50g of powdered sugar, 25g of almond powder, 10g of cocoa powder and 1g of salt , mix all together and then use a sieve to sift the flour to be finer.
Crack 1 egg into a bowl, beat the egg yolk and white with a whisk. Put on an electronic scale, take about 30g of beaten eggs .
Heat 75g butter in the microwave to melt, add the sifted flour to the butter and mix well. Next, add 30g of beaten eggs and continue to mix well. Finally, add 50g of flour number 8 and stir quickly.
Put everything in plastic wrap, then compress it into a cake, put it in the fridge for about 3 hours . After 3 hours, take out the dough, wait for the dough to soften and use a spatula to roll them to about 3mm .
Cut the dough into circles using an aluminum mold with a diameter of 130mm – 150mm . Place the dough into the tart pan and use a knife to cut off the excess above the rim of the pan.
Use a fork to poke small holes in the dough , then cover it with foil and place in a baking tray. Preheat the oven at 170 degrees Celsius for 10 minutes and bake the cake base for about 35 minutes at 160 degrees Celsius .
Step 3Make milk chocolate ice cream
Heat 150ml of heavy cream with 30g of starch syrup, then put it in a cup containing 150g of milk chocolate . Use a mixer to thoroughly mix the boiled heavy cream with the chocolate. Pour the mixture into a piping bag , cover the bag tightly and place in the refrigerator for at least 1 hour .
You can use a plastic bag (ant bag, no handle) to cut a corner of the bag if you don’t have an ice cream bag.
Step 4Make dark chocolate ice cream
Put 25ml of unsweetened fresh milk into the microwave to heat the milk, then put it in a cup containing 20g of dark chocolate , stir the mixture. Put in the whipped cream bag.
If you don’t have a microwave, you can put the milk in a water bath to keep it hot.
Step 5Complete
Squeeze the milk chocolate ganache into the tart frame . Place the frozen mint chocolate mousse on top of the cake frame and sprinkle some large chocolate beads for decoration.
