Ingredient

Traditional Brownie

  • 55 g flour
  • 225 g diameter
  • 2 eggs
  • 3 tablespoons cocoa powder
  • 55 g butter or margarine
  • 1/4 teaspoon baking powder
  • 170 g of bitter sweet socpa
  • 1/4 teaspoon salt
  • Powdered sugar (milled sugar)

Soft Brownie

  • 10 tablespoons (145 g) unsalted butter
  • 1 1/4 cup (250 g) granulated sugar
  • 3/4 cup and 2 tablespoons (65 g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup (70 g) all-purpose flour
  • 2/3 cup (75 g) crushed pecans or walnuts

Butter and line a baking tray 23 x 23 cm and 2.5 cm deep. If you like, you can line a baking tray with foil.
Melt butter or margarine in a small saucepan over low heat. The butter will take about 1-2 minutes to melt and will be quicker if you cook it at room temperature. While waiting for the butter to melt, complete the next two steps.
Mix the sugar and eggs in a bowl. Pour the sugar and eggs into a medium bowl and beat until well combined. This step will take about 1 minute. You can use a wooden spoon, whisk or electric mixer to mix the ingredients together.
Pour flour and cocoa powder into separate bowls. Pour these two ingredients into separate bowls and mix well.
Pour melted butter into the egg and sugar mixture. Then, stir until the butter is evenly combined and forms a smooth, light yellow, greasy mixture.
Slowly sift the cocoa powder mixture into the egg mixture. Pour the cocoa powder into the sieve and shake gently to let the cocoa fall into the egg mixture. You can use a fork to scrape the bottom of the sieve to make it easier to sift.
Add the socpa crumbs to the mixture. Now, mix the socpa crumbs with the rest of the ingredients. You can use regular socpa crumbs or pretty little socpa crumbs if you like. Or if you want to try something new, you can use white socpa chips.
Pour the mixture onto the baking tray. The buttered tray is ready to pour the mixture over. Use a flat plastic spatula or knife to spread the mixture evenly. It also doesn’t need to be spread too evenly, but try to spread the mixture evenly so that the cake has a more uniform thickness.

Place the baking tray on the rack in the center of the oven and bake for 30 minutes. After 25 minutes, check to make sure the cake is not burnt. While waiting for the cake to cook, you can clean up the kitchen, because if you keep walking around watching the cake harden, you will probably feel even more hungry.

Take the cake out of the oven and let it cool. Wait at least 5 minutes for the cake to cool and harden a bit. Do not cut while the cake is waiting to cool because the slice will not be neat and beautiful.

Let the mixture cool for about 3-5 minutes. The mixture should still be warm but not too hot.

Put the eggs in. Crack each egg into the mixture and beat well. This step will make the mixture smoother.
Pour in the flour. Now you can pour in the flour and mix well. This step will take at least 1-2 minutes. The dough will be very thick at this point, possibly thicker than a traditional brownie mix. It is this consistency that will make the cake softer.
Pour in the seeds. Pour walnuts, pecans, almonds, or your favorite nuts into the flour mixture. This step is optional but will help make the brownie more delicious.

Bake for about 20-25 minutes. After about 18 minutes, check the cake. If the cake is done, when you insert a toothpick in the center and pull it out, the cake will not stick to the toothpick. After 20-25 minutes, if the cake is still not cooked, continue to bake until the cake is done.

Cut the Brownie. This recipe will result in 16 medium brownies. However, you can cut into larger or smaller chunks depending on your preference.
