Heat up the honeycomb maker. Plug in the power and wait for the machine to heat up the mold or adjust to a certain temperature depending on the type of machine you are baking. Normally, the light will come on when the mold is hot enough.

  • The best way to test the temperature is to put a drop or two of water on the top of the cake pan. The drop of water will hiss for about 2-3 seconds before evaporating. If it takes a long time for the water to evaporate, the mold is not hot enough. If the water evaporates quickly, the temperature in the mold is too high.
Mix dry ingredients. Place flour, salt, sugar and baking powder in medium bowl. For a spongy honeycomb cake, sift the ingredients before mixing.
Separate eggs. Use an egg separator to separate the yolks and whites into separate bowls.

  • You can also separate an egg by breaking the shell in half and moving the yolk from one half of the shell to the other so the whites flow down into the bowl.
  • It’s okay to have a little bit of white on the yolk, but don’t let the yolk stick to the white. The white will be difficult to whip if there are some yolks in it.

Beat egg whites. Using a whisk or electric whisk, beat the egg whites until smooth and with soft peaks. The Joy of Cooking book describes the correct texture as “hard but not dry”.
Stir in wet ingredients. Whisk together butter or oil with egg yolks in a bowl. Add the milk and vanilla essence and continue to beat until the ingredients are combined.
Combine wet and dry ingredients. With the dry ingredients, create a well. Pour the egg yolk mixture into that recess. Stir the ingredients until the mixture is moist. Do not mix the ingredients too well, or the honeycomb cake will become hard. It’s okay to have a little bit of dough in the mix.
Mix egg whites. Gently fold the egg whites into the flour mixture until thickened. Again, don’t over mix. The way to mix this powder is to mix it very gently from the top down.

Bake honeycomb cake

Oil the honeycomb cake mold. Use a cake brush or paper towel to grease the top and bottom of the cake pan. Repeat this every time you make a new cake, otherwise the honeycomb cake will stick.
Put the dough into the mold. Pour in 1/2 to 1 cup of batter, depending on the type of cake pan. If you’re not sure, you should take less than you think will suffice. The dough will expand when baking. Pour the batter evenly on the underside of the cake pan.
Close the lid and wait until the honeycomb cake is cooked. It takes about 2 minutes for the cake to form. If you want the honeycomb cake to brown, bake it longer.

  • Do not press the lid with your hands. The lid is designed to press down deep enough and the honeycomb cake will swell slightly.
  • Observe the steam generation process. Steam will stop spraying or decrease greatly when the cake is cooked.
  • Listen and observe whether the thermostat is on or off. Sometimes, if it turns off, it means the honeycomb cake is cooked.
  • Honeycomb cakes will be less sticky when baked properly. If the cake pan is difficult to open even after you have oiled it, bake the cake for an additional minute.
  • Do not open the mold if you are patient enough to wait. Should try to bake the honeycomb cake in one go. If you open the pan while the cake is still raw, carefully close it and bake for a while.

Take out the honeycomb cake. Use a spatula to help you remove the cake without breaking or burning your hands. Place the cake on a plate and pour the dough into the mold to make a new cake. Repeat until the dough is gone.

Serve hot honeycomb cake with butter and maple syrup. Pure maple syrup is best if you can find it.
Serve with powdered sugar and fruit. This is a popular topping for honeycomb cakes, it creates a delicious and refreshing dessert. You can also try strawberries, blueberries or peaches.

  • To make the fruit sauce, put the chopped fruit, a few tablespoons of sugar, and half a cup of water in a small saucepan. Heat on stove over medium heat. Stir the mixture until it thickens and becomes a sauce that you can drizzle over the cake.
  • Fruit can also be baked directly with the cake batter. Stir some blueberries, chopped strawberries, sliced bananas or other fruit into the batter before pouring it into the mold.
Cover the cake with chocolate. Eat honeycomb cake with chocolate sauce and whipped cream for a delicious dessert. You can also bake a honeycomb cake with chocolate chips by adding the chocolate chips to the dough before pouring it into the mold.

Make bacon-flavored honeycomb cakes. Don’t know whether to eat honeycomb cake or bacon for breakfast? Why compromise when bacon combined with honeycomb cake makes a delicious dish? All you need are the traditional honeycomb dough ingredients and a packet of bacon. Frozen honeycomb cakes with a few pieces of bacon won’t taste good, so it’s best to be prepared to crack the eggs and stir in the dough.

  • Advice

    • After a few times, you’ll know how to pour the right amount of dough, set the right temperature, and know when the cake is done. Be patient and don’t give up if the first cake is flat or burnt or undercooked.
    • Place the honeycomb mold on a tile surface or a stone or glass cutting board. Because the surface below the mold will be very hot and the leftover dough may melt.
    • Do not use nonstick spray on nonstick honeycomb cake pans. Because it will affect the non-stick ability of the mold. See mold manual for more details.
    • Make honeycomb cakes at the table and eat them as soon as you take them out of the mold. If you can’t eat it right away, cover the cake and place it on a plate in the oven on low heat or the oven turned off after it has been preheated to low heat.
    • If you want to make honeycomb cakes at home without having to go through many steps, use pancake flour mixed with a few tablespoons of oil.
    • Bake all the cake batter that you have prepared. If there is excess dough, store it in an airtight container in the refrigerator and heat it up in the oven, not the microwave.
    • You can also make the cake using a sandwich pan.
    • Spread a thin layer of oil or butter on the surface of the mold before adding the dough to the cake. Otherwise, the cake will stick to the mold. Molds with non-stick surfaces sometimes help prevent this. [1] X Research Source
