Originating from South America, more specifically from Cpombia and Venezuela, Arepa cake is a familiar cornbread dish in the daily meal of indigenous people. Arepa cakes are made from cornmeal and grilled over an open fire (in Cpombia) or lightly fried and baked (in Venezuela). The cake can be eaten empty but is often stuffed with a delicious filling. You can make your own Arepa cake with 3 different fillings according to the instructions below:

Ingredient

  • 2 cups/235 g fine cornmeal
  • 2 cups/250 ml of water
  • A little salt
  • Oil

Steps

Arepa Cake Making

Mix ingredients. Pour the cornmeal and a pinch of salt into a large bowl. Use your fingers or a whisk to mix the ingredients together. Prepare warm water and pour it slowly into the flour mixture.

  • Buy pre-prepared fine cornmeal such as Harina PAN flour, the traditional flour used in Venezuela. Harina flour is usually yellow or white in color and is free of gluten and preservatives.
  • If you don’t have fine cornstarch, you can substitute it with coarsely ground cornstarch, but make sure the flour is preprocessed.
Dough. Knead the dough with water by hand until it forms a soft dough. Knead until no lumps of cornmeal remain and the dough can roll into a ball without breaking.

  • If the dough is too wet, add a few tablespoons of cornstarch and continue kneading.
  • If the dough comes apart easily, add 1-2 tablespoons of warm water. Continue adding water until the dough reaches the desired texture.

Shape the Arepa cake. Take a fist-sized handful of dough and roll into a ball. Then, use the palm of your hand to press the dough down to form a large circle. The circle should be 1.3 cm thick and 7.5-10 cm in diameter, depending on the size of the Arapes you want. Place the formed dough on the baking tray and continue to shape the remaining dough.

  • If you want to save the dough and bake it later, cover the cookie sheet with plastic film and place it in the refrigerator for 3-4 days.
  • Unbaked Arepa can also be frozen. Simply wrap each piece of dough in plastic wrap and place it in a resealable container. Cake flour can be stored for several months.

For Venezuelan-style baking, preheat the oven to 250°C. Preheat the oven when the dough is ready and before frying. The oven must be hot enough before you put the cake in.
Fried cake. Put a tablespoon of oil in a cast iron or large frying pan and heat over medium heat. Once the oil is hot, add a few pieces of cake batter and fry until a crispy crust is formed. This process takes about 3-4 minutes. Flip the cake over and fry again until the crust turns golden brown. Remove the cake and place it on a baking tray and continue to fry the remaining dough.
