There’s a simple trick that most restaurants use to have soft sticky rice or flavorful pudding. They use arborio rice, a very small, round grained white rice. You can cook arborio rice in the rice cooker like regular rice, but try cooking it on the stovetop with chicken broth and parmesan cheese for a mouthwatering risotto. For a rich dessert, you can toast arborio rice with milk and sugar. This easy pudding goes great with a sprinkle of cinnamon.

Put the arborio rice in a sieve and drain the water until the water is clear. Pour 2 cups (400 g) of rice into a tight mesh sieve and collect under the faucet. Let the water run over the rice until the water running down is no longer milky. [1] X Research Source

  • This step will help prevent the rice from clumping as it cooks.
Pour the washed rice into the rice cooker with 3 cups (720 ml) of water. If using a different amount of rice, just remember the ratio is 1 part cooked rice to 1.5 parts water. For example, if you want to cook 1 cup (200g) of rice, you need to use 1.5 cups (360 ml) of water. [2] X Research Source

Variation: To cook risotto in a rice cooker, replace the water with chicken broth. When the rice is done, stir in 1 cup (100 g) of grated parmesan cheese into the rice cooker.

Cover the pot and turn on the power. Depending on the type of pot, you may need to select the “Cook,” “Rice,” button, or simply turn on the power. Most rice cookers will automatically turn off when the cooking cycle is complete or will go into keep-warm mode until you unplug it. [3] X Research Sources

  • It usually takes about 30 minutes to cook arborio rice in a rice cooker.
Toss the rice and let it rest for 10 minutes before serving. When the rice cooker turns off or switches to the “Keep warm” button, open the lid and gently stir the rice with a wooden spoon. Cover the pot and wait another 10 minutes to complete the rice cooking cycle. [4] X Research Sources

  • Leftover rice can be stored in an airtight container in the refrigerator for up to 6 days.

Simmer 3 cups of chicken broth over medium-low heat. Pour broth into a large pot, place on the stove and turn on medium-low heat. Open the lid to see when the broth starts to bubble. [5] X Research Sources

  • You can continue to cook the risotto while the broth is boiling.
Sauté 1 onion over medium-low heat for 5-8 minutes. Heat 2 tablespoons (30 ml) of olive oil in a large 5-6 quart saucepan. Add the chopped onion to the pot and stir, stirring every few minutes until the onion is soft and transparent. [6] X Research Source

  • Remember not to over-fry the onions, or the risotto will be bitter.

Tips: To enhance the flavor of the dish, you can add 2 cloves of minced garlic and sautéed with onions.

Put the rice in a pot with the onions and cook for about 2-3 minutes. Place 2 cups (400 g) of arborio rice in a saucepan along with the sautéed onions and stir over medium-low heat until the oil coats the rice grains evenly. [7] X Research Sources

  • The rice will give off an aroma when roasted. The rice grains will be slightly clear at the edges, but still opaque white in the middle.
Pour the wine into the pot and cook for about 1 minute. Slowly pour 1/2 cup (120 ml) of unsweetened white wine over the rice and turn to medium heat. The wine will begin to bubble and evaporate during cooking. [8] X Research Sources

  • Stir the mixture continuously as the alcohol evaporates. This way the onions will not stick to the pan.
  • You can use non-sweet white wines like Sauvignon Blanc or Pinot Grigio.
Stir each ladle of broth into the pot. Use a ladle that can hold 180 ml – 240 ml of water to scoop the heated chicken broth into the pot, stirring constantly while pouring. [9] X Research Source

  • The rice will slowly absorb the broth and soften as it cooks.

Continue stirring the broth into the rice and cook for about 18-22 minutes. When the rice has absorbed the first ladle of broth, you will add another ladle to the stirring pot. Continue doing this while the rice soaks up the broth. The rice will be soft and sticky. [10] X Research Source

  • Taste a spoon to see if the rice is cooked. The rice grain should be soft and not mushy in the middle.
Turn off the heat and mix in the butter, parmesan cheese, salt and pepper. Mix in the rice 2 tablespoons (30 g) of chopped butter along with 2 cups of grated parmesan cheese. Taste the rice and add salt and pepper to taste. Serve while the rice is still hot. [11] X Research Source

  • If you don’t like the rice too thick, you can add a little chicken broth to loosen the rice.
  • Store risotto in an airtight container in the refrigerator for up to 5 days.

Preheat the oven to 163 degrees Celsius and butter the baking tray. Take a piece of butter and rub it all over the inside of a 2-liter baking tray. This will make it easier to remove the pudding after baking. [12] X Research Source
Place rice, sugar, salt and vanilla (if desired) in a tray. Place 1/2 cup (100g) arborio rice, 1/2 cup (100g) sugar, and 1/4 teaspoon salt in a buttered baking tray. If you want to add more flavor to the pudding, you can add a vanilla bean. [13] X Research Source

  • To enhance the vanilla flavor, you should cut the vanilla bean in half and carefully scrape the pulp out with a knife. Place both the pods and the powdered vanilla pods in a tray.

Variation for risotto: Place 1.5 cups (300 g) of arborio rice and 4 cups (1 liter) of chicken broth in a cast iron Dutch oven. Cover and bake in the oven at 177 degrees C for 45 minutes, then remove the pot to add 1 cup (240 ml) of chicken broth and 1/2 cup (120 ml) of white wine. You can also mix in 1 cup (100 g) of grated parmesan just before serving.

Pour in 4 cups (1 quart) of whole milk and spread butter on top. When poured into the tray, the milk will combine with the rice, sugar and salt. You can also stir gently if you want to blend well, then add 2 tablespoons (20 g) of chopped butter on top. [14] X Research Source

  • The butter will melt when baking and help the rice become richer.
Bake the pudding for 1 hour 45 minutes and stir occasionally. Place the baking tray in the preheated oven and bake until half the milk is absorbed. Stir the rice every 10-15 minutes so that the mixture is evenly mixed. [15] X Research Source

  • The top of the pudding will turn brown as it bakes. You can stir so that the cake surface blends back into the mixture.

Remove the cake and let it rest for 10-15 minutes. The milk will still be in the tray when the cake is done baking, but you can remove the cake tray from the oven when the rice is soft. Place the cake tray on the stove and let it cool for about 10-15 minutes. The rice will continue to cook and absorb more milk. [16] X Research Source

  • Avoid cooking until the milk has soaked into the rice, otherwise the cake will be dry and chewy.

Enjoy the pudding with some cinnamon powder sprinkled on top. You can enjoy the pudding warm, let it cool or chill, then sprinkle some cinnamon powder on top. If you like the cake even more rich, you can scoop a spoonful of snowflake cream on top of the cake. [17] X Research Source

    • Arborio rice pudding can be stored in an airtight container and refrigerated for up to 3 days.
  • Advice

    • Serve white arborio rice with sautéed vegetables or braised meat.
    • You can add a spoonful of marmalade to the pudding if you prefer a sweeter taste.
