Have you ever wondered why cutting onions causes tears and how to avoid it? Onions usually have 3 parts, including a thin outer layer (usually light brown), inside are the succulent white “scales” that we often eat, and the “base leaves” or called “root”. When you cut off the root or sprout of an onion, it releases an enzyme. This enzyme reacts with the rest of the onion and releases a gas. When this gas meets water, it produces acid. That means our eyes will have a certain amount of acid due to the reaction of this gas and tears. So if you don’t want to “cry” every time you cut an onion, try the following:

Use a very sharp knife to chop the onion. Enzymes are released when cells are broken, so you should use a sharp knife to cut it firmly instead of having to exert force every time you cut to reduce the amount of enzyme secreted. Even if you use other tips, just use a very sharp knife to cut the onion. It will help you cut onions faster.

Chill onions in the freezer for 10-15 minutes before slicing. This will reduce the amount of acid enzymes released into the air without affecting the taste of the onions. This method was introduced through the Food Detectives program and is considered the most effective way to reduce eye pain when cutting onions .

  • Putting onions in the freezer is also a good trick. But be careful not to put onions next to apples or potatoes, and should not be left in the refrigerator for too long (at most 20 minutes) to avoid causing odors.

Cut onions in water. This is an effective method but a bit difficult to implement. When in water, onions are slippery unless you pick them up and wait for them to drain and then cut them; but doing so doesn’t help either. If you choose this way, clearly define your “tact” before implementing.

  • Some people also use the method of cutting onions under running water, but this method is also a bit complicated. When the water is running, it will be difficult for you to hold the onion in your hand.
Cut the onion near hot or steaming water. Steam from a pot or kettle is very beneficial. It will absorb and dissolve the onion vapors.

Breathe through your mouth and stick out your tongue when chopping onions. The gas released from the onion will react with the amount of water on your tongue. Therefore, the olfactory nerve near the lacrimal gland will not be stimulated to make you tear up. And if you breathe through your nose as usual, your eyes will definitely sting immediately!
Soak onions in water before slicing. Enzymes from onions will be dissolved in water. However, this will reduce the taste of the onion and make the onion more slippery so it will be difficult to cut. If you don’t mind the taste of onions being faded, try this.
Cut the onion horizontally. Due to the structure of the fleshy part of the onion is tubular, you should cut the onion horizontally to avoid the onion drops in your eyes.

  • However, a light breeze can also blow tear gas directly into your eyes, so pay attention to the direction of the wind. When opening the fan, you should pay attention to the fan blowing in the right direction.

Whistling while slicing onions. Whistling creates a blast of air, helping to blow the tear gas away from your eyes. All you have to do is pick a catchy tune that you won’t be able to stop whistling. So you can comfortably chop onions without fear of tearing your eyes.

Suck on a piece of bread. Many people think that when chewing, especially chewing bread, it will avoid tears when cutting onions. Chew slowly, letting the piece of bread out of your mouth a little. At that time your mouth will be moistened, although it is a bit uncomfortable, but this way will help keep your eyes from burning.

  • Many people also recommend chewing gum. Although there is no explanation for this, you should try to apply it.

Wear protective glasses or a mask. If you have a pair of swimming goggles or lab goggles that fit well and cover your eyes, wear them when slicing onions. There won’t be any onion vapors that can get into your eyes! However, if the glasses do not fit properly, the tears will still occur as usual.

  • Beware of goggles that are advertised as one-size-fits-all. Usually they don’t fit 100%. What if you wear glasses? Best to try another way.

Cut onions in a well-ventilated place such as under a hood, fan or window . This will make the onion vapors blow away from your eyes. You can chop onions right on the stove and open the hood at high speed to suck all the air up. If not, you can cut right next to the window or out in the yard.
Use some acidic solution. Acidic or ionic solutions can degrade enzymes. Here are a few ways you can do it at home:

  • Apply vinegar to the cutting board. The acid in the vinegar will denature the enzyme.
  • Soak onions in salted water. This also degrades the enzyme but it will change the taste of the onion.
  • Use candles. Light a candle and keep it near the chopping board. The onion vapors will be absorbed by the burning candle.

    • However, this is not really effective. Some people say candles will only give off fragrance and not really help. But anyway it makes your kitchen smell good!
    • Don’t forget to blow out the candle after you finish cutting the onion.

  • Advice

    • Sweet onions like Vidalias are less irritating. You can try using sweet onions instead of regular onions.
    • Cut the onion last when cooking is complete (if possible). You won’t need to smell onions for too long in the kitchen.
    • Chew gum while slicing onions. Your mouth will be constantly working and this will keep you from getting a tear.
    • Use chilled onions if possible. This will make your eyes less painful.
    • Or you can light a match (not recommended) so that the burned sulfur layer can absorb all the enzymes.

    Warning

    • You should be careful when cutting onions with a sharp knife to avoid injury.
