Wash the sweet potato thoroughly and poke holes with a fork. Hold the sweet potato under running water and use a vegetable brush to scrub away the dirt. Use a fork to poke the potato to let the steam out of the potato while baking. Insert a fork into the sweet potato, about 1.5 cm deep. Poke about 6-12 times, remember to prick all sides of the potato. You can bake as many bulbs as you want. [1] X Research Source
Preheat the oven to 104 degrees Celsius and oil the outside of the potato. Use vegetable oil or olive oil to apply a thin layer on the outside of each potato. This step helps to keep the skin moist and soft. You can put a few drops of oil on the potato and rub it with your hands. [2] X Research Source
Loosely wrap the potato in foil. Loosely wrap each potato in foil to help cook evenly. Leave a bit of space at the ends instead of wrapping them close to the potato to allow steam to escape. [3] X Research Sources
Bake the potatoes for 45 minutes. Place the foil-wrapped potatoes directly on the griddle in the center of the oven. After 45 minutes of baking, take out a potato to see if it’s cooked. Carefully remove one from the oven with a pot lifter, unwrap the foil, and poke the potato with a knife. If the knife pokes the potato easily, it means the potato is cooked. If the potatoes are still firm, continue to bake 5 minutes at a time until tender. [4] X Research Sources
Leave the sweet potatoes in the oven for an additional 15 minutes after baking. Turn off the oven, but leave the potatoes on the griddle for another 10-15 minutes. This step is for the sweet potatoes to cook evenly! When the time is up, use a pot lifter to remove the potatoes as they are still very hot. [5] X Research Sources

Pro tip : To make the fries spongy on the inside and crispy on the outside, blanch the potato slices in a pot of salted water, then pat dry and freeze. When you’re about to eat, you’ll coat the potato slices with cornstarch and fry them until golden!

Fry sweet potatoes for 2-4 minutes. Carefully fry in small batches, dropping the coated potato slices into a deep fryer or cast iron skillet. Fry for 2-4 minutes or until crisp and golden. Continue frying the remaining batches of potatoes. [26] X Research Source
