Almost all of the pineapple’s sweetness will appear within a few days of rapid ripening on the tree. Pineapple will not be sweeter once picked. On the other hand, this exotic fruit can sometimes reach maturity even when the rind is completely green. If you’re lucky, your “green” pineapple will taste sweet and delicious. Smell the pineapple to check for ripeness. Most signs that the fruit is ripe don’t mean much for pineapples. Instead, smell the bottom of the pineapple: the sweet aroma means the pineapple is ripe. If the pineapple has almost no smell, it’s probably underripe. Cold pineapples never have a strong aroma, so it’s a good idea to let the pineapple come to room temperature before testing for ripeness this way.

Turn the pineapple upside down (optional). If the pineapple has some starch to convert to sugar, this starch will be in the stem of the pineapple.   • Reduce heat to simmer for about 10 minutes.
