Couscous is a Berber dish made from steamed sempina and flour. This is a very popular dish in Morocco, Algeria, Tunisia, Libya, the Sahel region in West Africa, France, the island of Madeira, the province of Trapani in western Sicily, Italy.   • 500-750 ml (2-3 cups) water
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 kg (6 cups) sempina powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons flour
  • 250 ml (1 cup) vegetable oil

Pour water into the steamer and bring to a boil. Just before steaming the Couscous, put the cinnamon sticks and bay leaves in the water.
Pour sempina flour into a bowl and slowly add flour, salt and 1/3 part boiling water.
Once the ingredients are well mixed, pour the mixture into a sieve. Note that large dough balls will have a hard time passing through the sieve and cook unevenly, so be sure to press them down.
Steam the sempina flour mixture in the steamer for about 15 minutes.
Remove the sempina dough from the steamer. Place the flour in a bowl and beat with a fork until smooth.
Add oil and 2/3 part boiling water to the dough. Couscous should have a wet texture. If necessary, add more water until the desired texture is reached. Mix well and let stand 10 minutes.
