The length of time you cook your brisket really affects the flavour and texture. Cooking a brisket for too long will dry it out and make it a little tough. It also means the juices will dry out, so it won’t be as flavourful and tender as it could be.

Changing the Temperature

I think it is best to choose a brisket that has some fat on it. This will make for a juicier and tastier brisket overall. You can usually pick from a few different cuts of brisket, and I suggest choosing the fattier one with more marbling.
