Prepare the meat. Ask the seller to choose a lean, low-fat meat for you. If you choose fatty meat, the fat will melt during processing and cause a fire; so use lean meat for the dry part. You should buy meat and process it on the same day.

  • Ask the butcher to grind the meat twice, first by machine through the big hole and next time by machine through the small hole.
Place minced meat in a bowl. You’ll add the other ingredients to the meat when it’s ready.
Chop onion and garlic. Put both in a bowl to mix well.
Add any ingredients you like to the meat. Includes Worcestershire sauce, tomato sauce, mustard sauce and minced herbs. These ingredients are added to your liking, but they give the meat a unique flavor.
Add egg yolks to the meat. Add salt and pepper to the egg yolks and mix well with the meat. It’s easier to stir with a spoon at first, then use clean hands to mix the ingredients again.
Shape the pieces of meat. Take only a small amount of meat at a time so you don’t have to squeeze and let the juices out.

  • Use your hands to shape 6 equal meatballs.
  • Press the meatball down to create a piece of meat about 1.3cm thick. Use your thumb to press down on the meat. This is to prevent the middle from swelling up, causing the meat to cook unevenly.

Arrange the pieces of meat on a plate. Use cling film or parchment paper to seal. Put the meat in the refrigerator for about 30 minutes or a few hours so that the meat is firm and easy to cook. Hamburgers should be cooked cold.

Select the processing method. Hamburgers can be cooked by grilling on the griddle, frying in a pan, or barbecue. Alternatively, you can also put it in the oven. The cooking method depends on the type of utensils you have and the flavor or texture of the meat you prefer. Whichever cooking method you choose, after you take your meat out of the fridge, apply some melted butter or oil to it before you cook it. Here are some methods you can use:

  • Grilling meat on a griddle: Heat a grill over medium heat. Line the grill with foil for easy cleaning after cooking. Place the pieces of meat on the grill. Bake for 6-7 minutes on each side or until meat is cooked through.
  • Frying meat in a pan: Put oil or butter in a pan to fry the meat. Should keep the stove on low heat and fry slowly so that the meat is cooked evenly.
  • Place the pieces of meat on the charcoal barbecue grill. Bake as usual.
  • Grilling meat in the oven: Place the meat in the oven at 180ºC for about 15 to 30 minutes, depending on the thickness of the meat. You’ll need to turn the underside of the meat over half way through the roasting time, and check regularly for doneness.

While preparing the meat, prepare the side dishes. You can choose to use any ingredients you like, but here’s what you need to prepare to make the traditional way:

  • Wash lettuce and tomatoes.
  • Cut the bread in half, then cut the tomatoes into thin slices.
  • Place bottles of ketchup and mayonnaise on the dining table for diners to add to their own taste.
Enjoy. After the meat has been cooked to the taste of the eater, it’s time to enjoy. Add the ingredients to the bread and bring it to the table.

  • Or you can layer the hamburger with other toppings like rice, fries, mashed potatoes, or a salad.

  • Advice

    • Do not press the meat with a grit stick while cooking. It will cause the juices to run out, causing the meat to dry out.
    • If you’re frying in a pan, it’s better to use a pan lid to keep the water and moisture in the meat.
    • If you want to make a cheeseburger, place a thin piece of cheese over the meat when it’s almost done.
    • Ground lamb can be substituted for beef if you prefer.
    • Choose a sauce that doesn’t contain a lot of sugar (or high-fructose corn syrup).
    • Put the meat and toppings in the bread next to the ketchup and mayonnaise.
    • You eat the hamburger as quickly as possible. Because the hot part of the meat is very susceptible to infection.
