Wash and defrost cod fillets. Pat dry after washing and defrosting fish. You should keep the fish fillet with an even thickness so that when baking in the oven, the fish will cook more evenly.

Preheat oven to 180ºC and prepare baking tray. Place parchment paper on a baking tray so the cod doesn’t stick to the tray while it’s baking.

Sprinkle salt and pepper on both sides of the fish. Mix 1-2 teaspoons of salt and pepper in a small bowl and spread on both sides of the fish and sprinkle a little on top. There is no “exact” amount of salt or pepper that you should use. If you don’t know how much to sprinkle, sprinkle some first and then sprinkle more before serving. Then place the cod fillets on a baking tray.

  • If you have coarse salt or sea salt, use it instead of refined salt. Large salt particles do not dissolve quickly, so it will create a more even taste for the fish.

Mix butter or soft margarine with lemon juice. Mix 1 tablespoon butter, lemon juice, and some onion or garlic powder in a small bowl.

  • This is when you can add the seasonings you like. Try adding chili powder, Paprika and/or Cayenenne pepper for a spicier cod, or add Oregano, rosemary, thyme (bay leaf) and/or basil leaves for an herb blend. Italian style.
  • Although you can use piu oil instead of butter, the fat in the butter will help keep the fish soft and fluffy.

Bake the fish for about 15-20 minutes. Once cooked, the cod meat will come apart easily when you use a fork. When cutting the fish, the meat should be smooth and should not have a crumbly texture.

Variations of grilled cod. You can follow this recipe to give your cod a new flavor:

  • Cook cod with chopped vegetables, such as 1 large tomato, 1 green bell pepper, 1 yellow squash or zucchini, 1/2 cup seeded, halved Kalamata piu oil, and garlic. Saute all the vegetables with 1 tablespoon of piu oil and then spread around the grilled cod. Cook all ingredients at once. [1] X Research Source
  • Cut 1/2 cup of fresh parsley and add to the butter mixture before dipping the fish in.
  • Melt the butter and then dip the cod fillet in to absorb the seasoning. You can then dip the cod in the batter to create a thin coating.

Mix bread crumbs and seasonings in a small bowl. Mix 1-1/2 cup breadcrumbs (regular crumbs if you prefer a fine textured cod or Panko bread crumbs if you prefer a crispier crust) with 1 teaspoon table salt, black pepper powder, 1/3 cup chopped coriander, 1/4 cup chopped scallions, 1 teaspoon garlic powder and your favorite seasoning. Mix ingredients together and set aside.

  • You can customize the ingredients for this breadcrumb mix, just make sure to have the “needed” ingredients of breadcrumbs and salt.
  • If you like a new spice, you can use a teaspoon of chili powder, Paprika, and/or Caynne for a spicy kick. If you prefer herbs, try adding 1 teaspoon of Oregano, rosemary, thyme, and/or dried basil.

Put 4 tablespoons of butter in the microwave and melt. Cut the butter into small cubes to melt it faster and microwave for about 30 seconds. Butter simply melts into liquid, no need to heat. Mix melted butter with the juice of 1 large lemon.

Dip the cod in the melted butter and breadcrumb mixture one at a time. Dip each piece of cod in the butter, making sure to coat both sides. Then, dip the fish in the breadcrumbs. Gently press the fish to completely cover the crumbs, then place the fish on a baking tray. Once the fish is full on the tray, pour the remaining butter mixture over.

Bake fish for 12-15 minutes. The fish should be crisp and soft, but the meat should still be firm when removed from the microwave. If the meat inside is still translucent, bake for another 2-3 minutes. Finally, garnish the fish with a slice of lemon, a sprig of fresh coriander and enjoy. [3] X Research Sources

Vary the ingredients to create a dish that suits your taste. Cod has a mild taste, so it is easy to combine with many different ingredients. So you can change the ingredients and customize the dish to your liking.

    • If you want a low-calorie dish, halve the butter and breadcrumbs. Simply drizzle with butter and sprinkle breadcrumbs on top of the fillet.
    • You can saute 2-3 chopped tomatoes, 4 cloves of garlic, a sliced onion with 1 tablespoon of piu oil and arrange around the fish to make a simple side dish.
    • Bread crumbs can be substituted with flour to coat the fish. [4] X Research Sources

  • Advice

    • Large cod is usually cut into slices or fillets [5] X Research Source Larousse Gastronomique, p. 278, (2009), ISBN 978-0-600-62042-6 . Chefs also like to use cod as an ingredient because the fish has a large bony structure that makes it easier to remove.
    • Cod is not a fatty fish and is rich in resistant salts. Oil in lean fish like cod is usually stored in the liver instead of in the meat, so it is very healthy. [6] X Research Source The Essential Seafood Cookbook, p. 197, (2000), ISBN 0-86411-889-9

    Warning

    • Do not bake the cod for too long. Cooking time too long will lose the delicate flavor of the fish and ruin the outer layer of meat.
