Prepare the broccoli. Wash and cut the broccoli to the size you want. You should cut the branches so that they are the same size so that the broccoli is cooked evenly.
Boiling water. Fill a large pot 2/3 full with water. Cover the pot and cook on high heat on the stove.

Prepare ice for soaking. While waiting for the water to boil, put cold water in a large bowl with some ice cubes and set the bowl of water aside.
Blanch the cabbage. When the water begins to boil, carefully place the broccoli in the pot of water. Start the blanching time when the water boils again.

  • With broccoli stalks about 4cm wide, you need about 3 minutes to blanch. You can adjust the blanching time depending on the size of the branch.
  • The broccoli will be light and firm (albeit softened) when you remove it from the pot.
Cool the broccoli. You can remove the broccoli with a slotted spoon or a small sieve or basket to drain. Then, immediately put the broccoli in ice water to reduce the temperature.

  • Remove the broccoli that has been cooled in cold water after 30 seconds and place in a basket to drain.

Prepare and wash the cauliflower. Cut the broccoli into branches of the same size for even cooking.
Prepare to steam. Pour 2.5 – 5 cm of water into the pot and heat on the stove. Place the broccoli in a steamer set away from the water. Cover the pot and prepare ice for soaking as described above.

Calculate the blanching time. You will calculate the blanching time as soon as you see the steam rising.

  • Steaming broccoli will take about 5 minutes.

Turn off the stove. Once the broccoli is done blanching, remove the steamer from the pot and immediately submerge the broccoli in cold water.
  • Finish blanching. After the broccoli has been soaked in cold water, place the broccoli in a basket to drain before eating or packing for freezing.
  • Advice

    • Place the blanched broccoli in an airtight plastic bag and freeze for later use.
    • Blanched broccoli can be eaten with a dressing or salad.
    • Heat blanched broccoli for 1 to 2 minutes when serving with other dishes.
    • Mix broccoli into a pasta dish or stir-fry before finishing the main course.

    Warning

    • Blanching for longer than 2 minutes will cause the broccoli to become discolored and mushy.
    • Not using enough water and only partially submerged broccoli will cause the broccoli to not cook evenly. You should submerge the broccoli in water when blanching.
