Compared with cane sugar or chemical sugar we use every day, stevia sugar has many outstanding advantages. Let’s find out more about this type of sugar with Tnhelearning.edu.vn to see what its outstanding advantages are.
What is stevia sugar?
Stevia is a type of sugar made from stevia plants, they are produced and put into use for the first time in Latin American countries such as Brazil and Paraguay . Currently, this type of sugar is approved as safe by the US Food and Drug Administration (FDA).
Produced from 100% plants so stevia is better than other sugars. They are often used by many people, especially those who have diabetes or are on a low-sweet diet.
The superiority of this type of sugar lies in its sweetness, which is 30-150 times higher than artificial sugars and has a fixed burning and pH value . In addition, these sugars are also stored very easily because they do not ferment.
Currently, stevia sugar is commonly used all over the world such as Europe, South America, China and even Vietnam.
How many calories in stevia?
According to USDA in 1g of grass sugar contains 0 calories. In addition, they also have some key components such as:
- 0g fat
- 0mg sodium
- 1g of carbohydrates
- 0g fiber
- 0g protein
Uses of stevia sugar
Satisfy human cravings without raising blood sugar, no calories
Sweet grass sugar has a sweet taste that is many times higher than normal sugar. The diterpene glycosides present in stevia leaves bring natural sweetness and are not hydrolyzed or absorbed through the gastrointestinal tract, thereby not causing hyperglycemia.
This type of sugar is very suitable for people with diabetes as well as dieters who can comfortably eat sweets without fear of affecting their health.
Helps lower blood sugar
The researched stevia sugar also helps us to slightly reduce and stabilize the blood sugar index by increasing insulin secretion, increasing glucose storage for the liver , increasing glucose tolerance in cells as well as reducing HbA1c index.
Reduce blood cholesterol
A study in India showed that total bad cholesterol (LDL) and triglycerides decreased significantly while good cholesterol (HDL) increased after 1 month of consuming stevia.
In addition, stevia sugar also has many other uses such as diuretic, thirst quenching and lowering blood pressure.
How to use stevia sugar
Sweet grass sugar can be used to replace regular sugar in daily meals, here are some suggestions for you:
– Used to make seasoning for cooking.
– Make coffee, fruit smoothies or sweet grass tea.
– Sprinkle on unsweetened yogurt.
– Sprinkle on cakes when baking.
– Making candy, cake, jam,…
Why use stevia sugar?
As you know, stevia sugar has absolutely no calories and carbs are naturally sweet, so they are very suitable for people with diabetes or those who intend to lose weight.
A trial by the Society for Biomedical Diabetes Research (SBDR) showed that stevia has the effect of improving blood pressure and blood sugar in diabetics.
In some countries such as Japan, India, Singapore, … stevia is also used to support the digestive system and help with weight loss. Although proven to be safe for people with diabetes, you also need to consult your doctor before intending to use.
The process of extracting stevia sugar from stevia leaves
Step 1: Dry
Using one of two methods is to dry directly in the sun or use an oven to help reduce the moisture in the material as well as preserve it longer.
Step 2: Grind, grind fine
The leaves are crushed, then compacted and stored in plastic bags to avoid moisture absorption. Because the stem has little sweetener, it will be composted to be used as organic fertilizer.
Step 3: Extraction and separation
The two most commonly used methods for extraction and separation are alcohol extraction (ethanol) and supercritical CO2 extraction.
Extraction method with ethanol : Using solvents at a temperature of 2 – 6 degrees Celsius to separate unwanted macromolecules such as lipids or bitter compounds to obtain sweet glucosides.
Supercritical CO2 method : CO2 is raised to supercritical conditions about a pressure of 72.9 bar by a pressure generator. Then this CO2 is led into the raw material tank.
By means of heat exchange, the condensate gases will form a sweet-rich liquid stream. These liquids are then compressed to separate and obtain the sweetener.
Step 4: Distillation
Distillation stage 1 : Water bath is used to remove residual ethanol impurities in the extraction process because ethanol is lighter than water, so it is easy to evaporate.
Distillation stage 2 : This stage is used to remove the oil ether solvent by the water bath method because similar to ethanol, oil ether has a lower boiling point and density than water, so it will evaporate easily.
Step 5: Precipitate Raw Stevioside
Method using methanol solvent: To crystallize stevioside to solid form. However, the disadvantage of using methanol is that it is harmful to human physiology, so it is not used in processing into food sugar.
Method of using divalent and trivalent salts : Extracts containing stevioside will be treated with salts with divalent and trivalent salts such as: calcium hydroxide, calcium chloride, calcium oxide, aluminum salts or iron salts, by maintaining pH from 8 – 10 in 2 – 5 minutes will get precipitate.
Step 6: Condensation
Evaporative concentration is used to increase the concentration of dry matter in preparation for drying and to remove methanol completely.
Step 7: Spray drying
A conical spray dryer will be used to dry the product, creating the desired powdery product.
