Prepare a baking pan or a ramekin mold. A 23cm diameter mold or individual ramekin molds can be used. Use a ceramic cake pan or ramekin to make it easier to pour. Use food spray or butter to coat around the mold. [1] X Research Source

Melt sugar to make caramel. Place a long-handled saucepan over medium-high heat. Pour in the sugar and slowly melt. It will take about 10 to 15 minutes. Stir often and do not take your eyes off the pot, as the sugar can become very hot and burn very quickly.

  • Turn off the heat when the sugar has melted and is golden brown. Continued cooking will cause the caramel to burn.
  • Don’t wait too long to add the caramel as it will solidify.

Pour caramel into cake pan or ramekin mold. Pour carefully as hot caramel can burn the skin. Tilt the cake pan to cover the bottom of the pan. Once poured, let the caramel cool for 10 minutes or more before adding the flan mixture.

Beat the flan mixture. Stir condensed milk and unsweetened condensed milk together in a bowl until smooth. Crack the eggs one at a time into this mixture. The finished mixture should have a light, fluffy, and fatty texture.

  • Make sure the eggs and milk are completely mixed together.
  • For added flavor, add a teaspoon of vanilla or lemon essential oil. [2] X Research Source

Preheat oven to 175 degrees Celsius.

Make a water bath. Water bath is a way to use water to cook the flan evenly and prevent the cake from cracking by creating a moist environment in the oven. The way to do it is to pour hot water into a baking tray large enough to place the cake mold inside. Place the cake pan or ramekin mold in the water.

  • Don’t pour too much water so it doesn’t rise to the edges of the cake pan or ramekin and spill over the cake.
  • The baking tray can be used to cook quite well.

Bake flan. Gently place the baking tray in the oven and then place it on the rack in the oven. Bake for 1 hour. The cake is done when the custard cream (a mixture of milk and eggs) has solidified. Check by tilting the baking pan, if the cake is frozen in the center, the cake is done. If there is still water in the middle of the cake, bake for a few more minutes. [3] X Research Sources

  • Check the flan every 15 minutes to make sure the water in the water bath is not boiling. This may cause the flan to overcook. If the water begins to bubble or boil, add more cold water to cool.
  • After the cake is done, let the cake cool on the stove for about 10 minutes.

Chill and Enjoy Flan

Refrigerate the flan. Place the cooled flan in the fridge to harden. Leave the cake in the fridge until it is cold. This will make it easier to remove the cake from the mold.

Take the cake out of the mold. Use a knife to cut around the edges of the cake. Wet the knife with warm water so the custard doesn’t stick. Place a large, rimmed plate on top of the cake pan. Hold the plate and the mold firmly and carefully place the cake on the plate.

Enjoy the flan. Cut into small slices or put on a dessert plate. Add caramel sauce from the cake pan to each portion. You can serve with whipped cream and honey if you like.
  • Advice

    • Instead of baking the flan, you can steam it. Once the mixture has been poured over the caramel, cover the cake tin or ramekin with foil. Steam the cake in the oven for 20 minutes, then put it in the fridge to set.
    • Once the sugar has melted, quickly pour it into the cake pan before the caramel solidifies.
    • Use ingredients at room temperature. Condensed milk is easier to stir when cooled. The cake will cook faster and more evenly if the cake mixture is left at room temperature.
