Eggplant is a fruit (yes, eggplant is a fruit) rich in vitamins and fiber commonly used in South American, Italian, Chinese and Vietnamese recipes. Wash eggplant and cut into slices about 1.2cm thick.
Place the eggplant on a tray lined with paper towels and sprinkle with a pinch of salt. Let stand for 15 minutes until the eggplant is reduced in water. Use a paper towel to lightly blot the eggplant and do the same for the other side.

Stir-fried eggplant

Wash eggplant, peel and cut into bite-sized pieces.
