You can mix the marinade with the chicken and keep it (cold) for 4 hours or overnight before cooking. Mince the garlic and other fresh ingredients. In order for the flavors of the garlic, onion, chili and ginger to penetrate the skin of the chicken, you need to mince it as finely as possible. Instead of soaking into a single spot of meat, fresh ingredients will coat the chicken more evenly after it’s been minced.

Don’t be afraid of not using the right ingredients. The great thing about preparing a marinade is that when you don’t have enough ingredients, you can use other ingredients instead. If you don’t have an ingredient available, you can find an alternative in your kitchen cupboard. Convenient alternatives such as:

  • Lemon juice instead of vinegar or vice versa
  • Any oil in place of olive oil or vice versa
  • Honey or maple syrup instead of sugar or vice versa

Place the marinated chicken in a food storage container. Look for a box that can hold enough meat so that when the marinade is poured on top, the whole chicken will be covered in the marinade. Close the lid of the box after marinating.

  • Food storage bags can be used if plastic or glass containers are not available.
  • Do not use metal containers as chemicals in the metal can react with the marinade and change the flavor.
