How to make sponge cake with rice flour

Use 3 egg whites in a large bowl and add ½ teaspoon of salt. Then, take the whisk to low setting, beat the eggs until tiny bubbles appear, then stop.

After the mixture has appeared bubbles, you add sugar. Note that each time you should add about 25g of sugar and after adding the sugar, beat the eggs at low speed for the sugar to dissolve quickly.

After you have added all the sugar, beat the eggs at high speed until the eggs are soft and creamy , with a certain smoothness and flexibility. You can check by using a spoon and then dipping into the mixture, when lifted, you see a vertical tip but the tip turns downward, then the mixture is done.

You can check the doneness of the cake by running a skewer through the surface of the cake then removing and observing. If the skewers are still wet and sticky with flour, the cake is not cooked, and if the skewers are not wet, the cake is ready!
