Ingredient

Pan-fried zucchini

  • 1 clove of peeled garlic
  • 1 teaspoon olive oil
  • 1/4 teaspoon dried red chili powder
  • 4 medium zucchini, cut into 1.3 cm . thick slices
  • Salt
  • Fresh black pepper powder
  • 2 teaspoons grated Parmesan cheese (optional)

Part 4 eaters | Total time: 20 minutes

Grilled Zucchini Good for Health

  • 2 zucchini
  • 1 egg white
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup salty bread crumbs

Result: 32 grilled zucchini sticks | Total time: 40 minutes

Zucchini Bread

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons cinnamon powder
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Result: 2 loaves of bread | 1 hour 40 minutes

Mince the garlic. Place the garlic on a cutting board and use a kitchen knife to mince it.
Heat the piu oil in a large frying pan over medium heat. Add the garlic and dried chili powder to the pan and stir well for 30 seconds. Remove the garlic from the pan (optional).
Put the sliced zucchini in the pan. Use wooden chopsticks to stir until each slice is evenly coated with oil.
Fry until both sides turn brown, then turn over and sauté for 1 more minute. Remove the pan from the heat and season with salt and pepper.

Preheat oven to 220 degrees Celsius.
Cut the zucchini into bars. Each zucchini stick should be about 7.5 cm long and 1.5 cm wide like a potato chip bar.
Whisk the egg whites and milk together in a small bowl. Mix cheese and breadcrumbs in separate bowls.

Spray non-stick solution on the baking tray. Or you can stack foil on the tray to prevent sticking.
Dip each zucchini stick into the egg white mixture and then into the bread crumb mixture. Arrange the zucchini stick on the baking tray.

Preheat oven to 160 degrees C. Brush oil and flour around two 12 cm x 23 cm bread pans.
Use a cheese grater to grate the zucchini. There is no need to peel the zucchini before grating.
Mix flour, salt, baking powder, baking soda, and cinnamon in a large bowl.
Whisk eggs, oil, vanilla extract and sugar together in a separate bowl.
Mix the egg mixture and flour mixture together.
Add the flour and walnuts and mix well. Pour the flour mixture into the pan.

Bake for about 40-60 minutes. Use a fork to poke the cake to check if it’s cooked. If the cake is cooked, when you remove the fork, there will be no dough on the plate.
