If Most Compatible is selected, the image will have a higher quality because it is saved in JPEG format. The price to pay is the reduced video resolution.
Selecting High Efficiency will increase the video resolution (up to 4K, depending on the phone or tablet), but the photos will be saved in a slightly lower resolution format.
