Step 1Processing pig stomach

You put 500g of pork stomach in a bowl, then add 1 teaspoon of vinegar, 1 teaspoon of salt and rub it thoroughly both inside and out, then rinse with clean water. You repeat the above process 1-2 more times until the pig’s stomach is completely clean.
Then, you boil 1 pot of water, put the pig’s stomach into blanching briefly. When the water boils again, turn off the stove, take it out and use a razor to clean the stain, wash it several times with water.
Next, you boil another pot of boiling water with ½ onion, 1 smashed lemongrass and 1 teaspoon salt. Boil your stomach for about 40 minutes, then take it out and cut it into bite-sized pieces.

Step 2Prepare other ingredients
In this step, you proceed to prepare tomatoes, pineapple, celery and tamarind. For tomatoes, you wash and then cut the areca rind, if fragrant, peel off the skin and cut into small pieces. Next, you wash the celery and cut it into pieces.
For the sour tamarind part, put it in a bowl with a little warm water, and squeeze out the water. Then, you filter through a sieve to get the tamarind juice.
Step 3Stir fried sweet and sour stomach
You put the pan on the stove with 2 tablespoons of cooking oil and then fry the minced garlic until fragrant. When the garlic is golden, add in the chopped tomatoes and pineapple, then saute for about 5 minutes.
You season with ½ teaspoon salt, 1 teaspoon seasoning, 1 teaspoon sugar and 1 part tamarind juice (depending on your sweet and sour taste). You add the pork belly and continue to stir-fry.
When the seasoning has melted, the pork stomach is hunted, then you add the celery and stir-fry for a while and then turn off the heat.
