How to make rat bread
Step 1Make the dough
Put in a bowl 150g of flour number 11, 2g of brown yeast, 2g of salt, 90ml of water, then knead well for 1-2 minutes and leave for 8-10 hours.

Step 2Make the main dough
In a bowl, add 300g of flour number 11, 3g of brown yeast, 1g of salt, 1 egg, 150ml of water and the original yeast. Then you mix it all together. Then let the dough rest for about 1 hour at room temperature.
Step 3Dough stuffing
After 1 hour, take the dough out and form a square, then fold the four corners of the dough in and roll it over with a rolling pin. Continue doing this about 3 times so that the finished bread will thicken and taste better.
