Basic Aipi Sauce

  • 2 egg yolks
  • 2-8 garlic cloves
  • 1/2 teaspoon salt
  • 1 tablespoon white wine vinegar
  • 300ml olive oil
  • Pureed fresh pepper

Mustard Aipi Sauce

  • 1 egg yolk
  • 1 tablespoon Dijon mustard
  • 1 clove of minced garlic
  • 1 cup (240ml) olive oil
  • 2 teaspoons of water
  • Lemon juice
  • Salt and pepper

Aipi sauce without eggs

  • 1 teaspoon salt
  • 4 cloves of peeled garlic
  • 1/4 lemon squeezed juice
  • 1/2 cup extra virgin olive oil

Steps

Make basic aipi sauce

Place all ingredients except the oil in a blender or food processor. Add a little pepper to taste.
Blend the ingredients quickly until you have a smooth creamy mixture.
Add oil slowly. You still leave the blender running and pour the oil through the funnel. Continue adding oil until the mixture thickens and is light and shiny.

Cover the mixture and refrigerate until needed. Thus, the mixture will keep up to 3 days.

Make Mustard Aipi Sauce

Use a whisk to whisk together the egg yolks, Dijon mustard, and a pinch of salt. Wait until you see the egg yolks and mustard start to mix. Add the garlic and keep stirring.
Slowly drizzle the olive oil into the mixture and continue stirring while adding the oil. Stir the ingredients for about 5 minutes to get an even mixture. Slowly add more water to create texture as the mixture thickens.
Add some salt and pepper and pour the lemon juice into the bowl. Place the mixture in the refrigerator until needed.

Make Aipi Sauce Without Eggs

Add the garlic cloves and salt and blender to puree.
Place ingredients in a ceramic or glass bowl.
Slowly pour in 1/4 cup of olive oil. Stir while adding the oil to blend the ingredients.
Stir in more lemon juice. Next, you add the remaining oil and continue to stir.
Pour the mixture into a ceramic bowl. If not using immediately, cover the mixture and refrigerate until needed.
